About:

A friend doubles this recipe when she is entertaining a large group. It can be assembled in advance in advance and refrigerated. Increase cooking time by 15 minutes if it has been refrigerated.

What you'll need:

  • 6 oz uncooked elbow macaroni
  • 1 lb extra-lean ground beef or ground turkey (7% fat)
  • 1/2 med green pepper, chopped
  • 1 small onion, chopped
  • 14 1/2 oz diced tomatoes Sodium is figured for no added salt.
  • 8 oz tomato sauce
  • 4 oz mushroom pieces and stems, drained and rinsed
  • 3/4 cup grated, reduced-fat cheddar cheese
  • 1/2 tsp. chopped garlic
  • 1/2 tsp. chili powder
  • 1/4 tsp. salt (optional)

Instructions:

  • Preheat oven 350 degrees.
  • Cook macaroni according to package directions. Drain.
  • Spray a large skillet with nonstick cooking spray. Add ground meat, green pepper, and onion. Sauté until meat is cooked. Add remaining ingredients and macaroni.
  • Pour into a 2 1/2 –quart covered casserole that has been sprayed with nonstick cooking spray.
  • Bake, covered, for 35-40 minutes or until thoroughly heated.
