Lime Cottage Salad

About:

This is a light, refreshing salad and it is great to take a potluck. It can also be served as a dessert.

What you'll need:

  • 1 small box sugar-free, lime flavored gelatin (0.3 ounces)
  • 1 cup fat-free plain yogurt
  • 2 cup low-fat, small curd cottage cheese
  • 1 can crushed pineapple, in juice, drained (20 ounces)
  • 2 cup fat-free whipped topping

Instructions:

  • Mix gelatin with yogurt in a medium bowl. Add cottage cheese and pineapple. Mix well.
  • Gently mix in whipped topping. This is ready to serve or can be refrigerated for late use.
