About:

Here is a salad that is colorful, easy to prepare, and one that the whole family will enjoy. Either cooked shrimp or fresh crab can be used in place of imitation crab.

What you'll need:

  • 4 oz rotini noodles, corkscrew shape (1 ½ cups uncooked)
  • 8 oz imitation crabmeat
  • 4 oz grated reduced-fat cheddar cheese
  • 1 cup chopped celery
  • 1/2 cup chopped red bell pepper
  • 3 1/2 med green onions, chopped
  • 1/2 cup fat-free or reduced-fat ranch-style dressing

Instructions:

  • Prepare noodles according to package directions omitting salt and oil. Drain and set aside.
  • In a large bowl, mix together crabmeat, cheese, celery, bell pepper, and onion. Toss with noodles and dressing.
  • Refrigerate to chill thoroughly before serving.
