This recipe won a blue ribbon at the Wasco County Fair in Oregon. Consider doubling this recipe and making two loaves. Freeze one for later use.

What you'll need:

  • 5 oz dates, chopped (about 1 cup)
  • 1 tsp. baking soda
  • 1 cup hot coffee
  • 1 cup granulated sugar (or sugar substitute)
  • 1/4 cup egg substitute (equal to 1 egg)
  • 1 tbsp. canola oil
  • 1 tsp. vanilla
  • 1/8 tsp. salt (optional)
  • 2 cup unbleached all-purpose flour
  • 1/2 cup chopped walnuts

Instructions:

  • Preheat oven to 350 degrees.
  • Mix dates with baking soda and coffee. Set aside to cool.
  • Mix in sugar, egg substitute, canola oil, vanilla, and salt (optional).
  • Add flour and stir just until flour is moistened. Fold in nuts.
  • Pour into a 9” x 5” x 3” loaf pan that has been sprayed with nonstick cooking spray.
  • Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
