Sweet and Sour Pork

About:

Serve this with rice or noodles, and you have a complete meal.

What you'll need:

  • 1 lb pork tenderloin cut into ½” cubes
  • 1 tsp. chopped garlic
  • 1 cup fat-free chicken broth Sodium is figured for reduced sodium.
  • 1 tbsp. lite soy sauce
  • 1 1/2 cup sliced green bell peppers
  • 2 cup sliced celery
  • 8 oz unsweetened pineapple tidbits, in juice, not drained
  • 2 tbsp. cornstarch

Instructions:

  • Spray a skillet with nonstick cooking spray.
  • Brown pork with garlic. Add chicken broth, soy sauce, green pepper, and celery. Cover and simmer for 10 minutes.
  • Meanwhile, drain the pineapple, reserving the juice. Blend cornstarch with reserved pineapple juice and add to the skillet.
  • Cook, stirring constantly, until mixture thickens. Add pineapple and heat thoroughly.
