This is a delicious way to serve fish when you`re in a hurry. I like the combination of cumin with the sweetness of the apricot preserves.

What you'll need:

  • 1 lb fish-fillets (snapper, sole)
  • 1/3 cup fat-free plain yogurt
  • 3 tbsp. sugar-free apricot preserves
  • 1 tsp. ground cumin
  • 1/2 tsp. salt (optional)

Instructions:

  • Arrange fish in a 9-inch by 13-inch baking pan that has been sprayed with nonstick cooking spray. Use a microwave-safe dish if cooking in the microwave.
