What you'll need

  • 2 cup canned black beans, rinsed and drained
  • 1/2 cup dry seasoned breadcrumbs
  • 1/3 cup chopped fresh dill
  • 1/3 cup chopped red onions
  • 1/4 cup finely chopped carrots
  • 2 tbsp. cornmeal
  • 1 med egg
  • 1 1/2 tsp. minced garlic
  • 1/4 tsp. salt
  • 3 tbsp. light sour cream (sauce)
  • 2 tbsp. light mayonnaise (sauce)
  • 2 tsp. freshly squeezed lemon juice (sauce)
  • 1 tbsp. chopped fresh dill (sauce)
  • 1/3 tsp. minced garlic (sauce)

Instructions

  • Step 1
    Preheat oven to 425-degrees. Spray baking sheets with vegetable spray.
  • Step 2
    In a food processor, combine black beans, bread crumbs, dill, onions, carrots, cornmeal, egg, garlic and salt. Pulse on and off until well combined. With wet hands, scoop up 1/4 cup of mixture and form into a patty. Put on prepared baking sheet. Repeat procedure for remaining patties.
  • Step 3
    Bake 15 minutes, turning at the halfway point.
  • Step 4
    Meanwhile, make the sauce: In a small bowl, stir together sour cream, mayonnaise, lemon juice, garlic and dill.
  • Step 5
    Serve burgers hot with sauce on side.
