What you'll need
2 cupcanned black beans, rinsed and drained
1/2 cupdry seasoned breadcrumbs
1/3 cupchopped fresh dill
1/3 cupchopped red onions
1/4 cupfinely chopped carrots
2 tbsp.cornmeal
1 medegg
1 1/2 tsp.minced garlic
1/4 tsp.salt
3 tbsp.light sour cream (sauce)
2 tbsp.light mayonnaise (sauce)
2 tsp.freshly squeezed lemon juice (sauce)
1 tbsp.chopped fresh dill (sauce)
1/3 tsp.minced garlic (sauce)
Instructions
Step 1 Preheat oven to 425-degrees. Spray baking sheets with vegetable spray.
Step 2 In a food processor, combine black beans, bread crumbs, dill, onions, carrots, cornmeal, egg, garlic and salt. Pulse on and off until well combined. With wet hands, scoop up 1/4 cup of mixture and form into a patty. Put on prepared baking sheet. Repeat procedure for remaining patties.
Step 3 Bake 15 minutes, turning at the halfway point.
Step 4 Meanwhile, make the sauce: In a small bowl, stir together sour cream, mayonnaise, lemon juice, garlic and dill.
