What you'll need
12 medlow calorie crepes
1 cupcreamed cottage cheese
2 tbsp.granulated sugar replacement
1 tsp.vanilla extract
1/2 tsp.lemon peel (grated)
2 tbsp.powdered sugar replacement
Step 1 Reserve low calorie crepes. Combine cottage cheese, granulated sugar
replacement, vanilla and lemon peel in mixing bowl. Whip with fork until thoroughly blended. Fill each low calorie crepe with heaping 1 tablespoon of cottage cheese filling, roll each one to form blintzes and place in shallow pan.
Step 2 Bake blintzes at 350-degrees for 15 minutes, or until the blintzes are warm. Sift the powdered sugar replacement over the blintzes.
Step 3 Microwave Directions:
Microwave: Cook blintzes on medium for one minute. Sift the powdered sugar replacement over the blintzes.
