Similar to a deviled egg, these blushing eggs mash the yolks with cream cheese, tomato puree and mayonnaise. Serve on a bed of lettuce.
What you'll need
- 2 med hard boiled eggs
- 1 oz cream cheese, softened
- 3/4 tsp. mayonnaise
- 1/4 med butterhead lettuce, shredded
- Step 1
Cut eggs in half lengthwise and scoop out egg yolks and mash.
- Step 2
Combine egg yolks, cream cheese, tomato puree and mayonnaise in a bowl.
- Step 3
Beat well to give the cream cheese mixture a soft piping consistency; add more mayonnaise if needed. Season with salt and pepper to taste.
- Step 4
Pipe mixture back into egg whites. Serve on a bed of fresh lettuce.
