Summary

This zingy bacon and egg burrito is ready to "wrap" in about ten minutes. (NOTE: used thin sliced turkey bacon (salt, red pepper, and hot pepper sauce not in analysis))

What you'll need

  • 1 slice turkey bacon, chopped
  • 2 tbsp. chopped green sweet pepper
  • 1/8 tsp. ground cumin
  • 1/8 tsp. salt (optional)
  • 1/8 tsp. crushed red pepper (optional)
  • 2 med egg whites, slightly beaten, or 1/4-cup refrigerated egg product
  • 2 tbsp. chopped tomato
  • 3 dash bottled hot pepper sauce (optional)
  • 1 med warmed 8-inch fat-free flour tortilla

Instructions

  • Step 1
    In a medium nonstick skillet cook bacon until crisp.
  • Step 2
    Add green pepper, cumin, and salt and crushed red pepper, if desired. Cook for three minutes. Add egg whites or egg product; cook for two minutes. Stir in tomato and hot pepper sauce, if desired. Spoon onto tortilla and roll up.
