1/4 cupraw honey (you may add 1 more tablespoon for a sweeter cookie)
1/4 cupbrown rice syrup (you may add 1 more tablespoon for a sweeter cookie)
1 medorganic egg
1 dashof salt
Step 1 Preheat oven to 350 degrees Fahrenheit. Mix together all dry ingredients, raisins, and nuts.
Step 2 In a large bowl, mix all wet ingredients together, including carrots; gradually add the dry ingredients, making sure the raisins and carrots and brown rice syrup before adding them.
Step 3 Drop with a spoon onto a greased baking sheet; bake for about 8 minutes.
Step 4 SUBSTITUTIONS: You could add many different goodies to this recipe. How about some coconut, mixed nuts (except peanuts, seeds, or a small amount of cut fruit? if you want to use a different flour, you could substitute quino or amaranth flour in place of the spelt flour. Remember to add 1/8-1/4 cup of arrowroot powder or other binder.
