Summary

What you’ll need
1 small head of cabbage, chopped2 med stalks of celery1/2 med onion, chopped1 dash sea salt (to taste)1 dash pepper (to taste)1/2 cup rice milk or soy milk (more or less, as needed)1 cup ground cashews

Instructions
Step 1
Preheat oven to 350 degrees Farhenheit. Mix together cabbage, celery, onion, and seasonings, and place in a baking dish. Add rice milk or soy milk to cover; don’t add too much. Bake until softened, about 50 minutes.
Step 2
Top with ground cashews.
Step 3
SUBSTITUTIONS: Experiment with different seasonings. If you are able to tolerate a little dairy, adding organic feta or goat cheese imparts a truly unique flavor.
