The cashews make the flavor very surprising and appealing.

What you'll need

  • 1 small head of cabbage, chopped
  • 2 med stalks of celery
  • 1/2 med onion, chopped
  • 1 dash sea salt (to taste)
  • 1 dash pepper (to taste)
  • 1/2 cup rice milk or soy milk (more or less, as needed)
  • 1 cup ground cashews


  • Step 1
    Preheat oven to 350 degrees Farhenheit. Mix together cabbage, celery, onion, and seasonings, and place in a baking dish. Add rice milk or soy milk to cover; don't add too much. Bake until softened, about 50 minutes.
  • Step 2
    Top with ground cashews.
  • Step 3
    SUBSTITUTIONS: Experiment with different seasonings. If you are able to tolerate a little dairy, adding organic feta or goat cheese imparts a truly unique flavor.
