What you'll need

  • 1 cup chopped romaine lettuce
  • 1/4 cup chopped fresh basil
  • 1/2 cup sliced cucumbers
  • 1 med star fruit (cut into 5 stars)
  • 4 small walnut halves
  • 1 tsp. olive oil (for dressing)
  • 1 packet(s) sugar substitute (used Splenda in the analysis) (for dressing)
  • 1 oz fresh orange juice (for dressing)
  • 2 tsp. apple cider vinegar (for dressing)

Instructions

  • Step 1
    Mix dressing ingredients together.
  • Step 2
    Spray cut star fruit pieces lightly with canola or olive oil cooking spray. Broil until slightly brown. (NOTE: If you have a grill going at the same time you can grill the star fruit instead of broiling.
  • Step 3
    In a salad bowl mix lettuce, basil, cucumbers, and walnuts. Top with broiled star fruit. Top with dressing. Eat immediately. YUM!! (NOTE: High source of vitamin A and vitamin C, good source of fiber.)
