What you'll need

  • 1 lb green beans, blanched and cooled
  • 2 tbsp. olive oil
  • 2 tsp. apple cider vinegar
  • 1/2 tsp. thyme
  • 1 med garlic clove, minced
  • 1 small shallot, minced
  • 1 pinch sea salt and pepper (to taste)


  • Step 1
    Prepare the beans by blanching in steam for 2-3 minutes until they are bright green. Set aside to cool.
  • Step 2
    Whisk together remaining ingredients, and toss with cooled green beans. Place in refrigerator to marinate for 1 hour before serving.
