What you’ll need
1 med organic egg, beaten1/4 cup rice milk1/2 cup organic butter (1 stick), softened1/2 cup coconut oil, warmed to a liquid consistency1/2 cup pure honey1 tsp. vanilla extract1 1/2 cup oat flour1 tsp. baking soda1 tsp. cinnamon1 tsp. sea salt3 cup rolled oats1/2 cup walnut pieces1/4 cup sunflower seeds1/2 cup minced, peeled apple

Instructions
Step 1
Preheat oven to 375 degrees Fahrenheit.
Step 2
Mix together wet ingredients, including softened butter, in a large bowl. In a separate, smaller bowl, mix together flour, baking soda, cinnamon, and sea salt. Slowly add dry ingredients to wet ingredients, stirring constantly, until you have a smooth batter. Add oats, nuts, seeds, and apple, stirring gently until mixture is uniform. Drop with a spoon onto a greased cookie sheet, and bake for 9-12 minutes.

SUBSTITUTIONS: If you cannot tolerate any dairy, coconut oil can be used instead of butter with no change in flavor. Any nuts or seeds and many fruits can be used, so don’t be afraid to experiment. Add grated zucchini to moisten and add flavor to these cookies.
