(NOTE: used canola oil for vegetable oil, packed brown sugar and low sodium baking powder)

What you'll need

  • 2 cup raisin bran cereal
  • 1 cup skim milk
  • 3 tbsp. vegetable oil
  • 1 med egg
  • 1 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 2 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. salt


  • Step 1
    Preheat oven to 425-degrees. Prepare muffin tins with non-stick spray. Mix cereals, milk, oil, and egg in large mixing bowl. Allow standing for at least five minutes.
  • Step 2
    Combine remaining dry ingredients and add to cereal mixture. Stir until all ingredients are moistened. Fill muffin cups about 2/3 full. Bake for 15 to 20 minutes.
