Summary
If you desire mashed potatoes at your Thanksgiving dinner, this is a great alternative.
What you'll need
1 lbJerusalem artichokes, scrubbed
1 tbsp.olive oil
1 tbsp.fresh tarragon, chopped
2 tbsp.soy milk
1 dashsea salt and pepper (to taste)
Instructions
Step 1 Preheat oven to 400 degrees Fahrenheit.
Step 2 Cut artichokes into wedges, toss with olive oil, and place in a baking pan. Bake for 35-40 minutes or until tender.
Step 3 Remove from oven, mash well or pass through a food processor, and add remaining ingredients. Stir once more and serve warm.
Step 4 SUBSTITUTIONS: If you have a favorite mashed potato recipe, try it with Jerusalem artichokes. Just make sure to use a milk substitute, unless you can tolerate a littler dairy. You can also steam cauliflower and use it in place of the Jerusalem artichokes. In place of tarragon, try oregano and/or thyme.
