This is a simple, basic muffin recipe that creates muffins brimming with tangy orange flavor without being packed with unhealthy sugar. (NOTE: in analysis used 24 packets sucralose, low sodium baking powder, unsalted margarine, and egg substitute equal to 1 egg.)

What you'll need

  • 2 cup all purpose flour
  • 7 1/4 tsp. sugar substitute for recipes or 24 packets or 1-cup measurable sugar substitute
  • 2 tsp. baking powder
  • 1/8 tsp. salt
  • 1 cup orange juice
  • 4 tbsp. margarine, melted
  • 2 med egg whites, slightly beaten or egg substitute equivalent to one egg
  • 1 tsp. grated orange rind


  • Step 1
    Combine flour, sugar substitute, baking powder and salt in a large bowl. Add orange juice, margarine, egg and orange rind. Mix well. Spray muffin tins with non-stick cooking spray. Fill tins 2/3 full.
  • Step 2
    Bake at 375-degrees for 20 to 25 minutes. Cool on wire rack.
