Mashed potato flakes speed up this dish. Add buttermilk, fresh chives, green onion tops and freshly ground black pepper for a great side dish.
What you'll need
- 1 1/3 cup instant mashed potato flakes
- 1/2 cup low-fat (1 percent fat) buttermilk
- 2 tbsp. chopped fresh chives or finely chopped green onion tops
- 1/4 tsp. freshly ground pepper
- Step 1
Bring 1 cup water to a boil in a small saucepan.
- Step 2
Stir in the remaining ingredients; remove from the heat.
- Step 3
Cover and let stand 2 minutes; stir with a fork.
