What you'll need
4 cupfat free chicken broth
2 cupcubed cooked chicken breast
2 largecelery ribs, chopped
2 medcarrots, chopped
1 medgreen pepper, chopped
1 medonion, chopped
1/3 cupuncooked long grain rice
1/4 cupminced fresh cilantro or parsley
1/2 tsp.dried oregano
1/2 tsp.salt, optional
1/2 tsp.pepper
1/4 tsp.ground cumin
1/4 tsp.teaspoon crushed red pepper flakes
Instructions
Step 1 In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer for 20 - 25 minutes or until rice and vegetables are tender.
