What you'll need

  • 4 cup fat free chicken broth
  • 2 cup cubed cooked chicken breast
  • 2 large celery ribs, chopped
  • 2 med carrots, chopped
  • 1 med green pepper, chopped
  • 1 med onion, chopped
  • 1/3 cup uncooked long grain rice
  • 1/4 cup minced fresh cilantro or parsley
  • 1/2 tsp. dried oregano
  • 1/2 tsp. salt, optional
  • 1/2 tsp. pepper
  • 1/4 tsp. ground cumin
  • 1/4 tsp. teaspoon crushed red pepper flakes

Instructions

  • Step 1
    In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer for 20 - 25 minutes or until rice and vegetables are tender.
