What you'll need

  • 1 med sweet potato
  • 1 med chipotle pepper in adobo sauce (from canned about 2 tablespoons)
  • 2 tbsp. fresh squeezed lime juice
  • 1 tbsp. salsa (homemade)
  • 1/4 cup shredded reduced fat Pepper Jack cheese

Instructions

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Bake sweet potato at 350 degrees for 45 minutes or until tender. Let cool slightly and peel.
  • Step 3
    Place baked sweet potato in small food processor or blender, add remaining ingredients. Pulse until well combined. Serve warm fresh veggies, crackers, or tortilla chips (not included in recipe analysis)
