Summary

Fried zucchini is great but frying isn`t so try this stir-fried zucchini recipe and enjoy a similar taste without the health threats.

What you'll need

  • 1 tbsp. canola or corn oil
  • 1 lb zucchini, cut into 1-1/2 to 2-inch strips
  • 1 med sweet onion, peeled and cut in thin wedges
  • 1/2 tsp. grated fresh ginger root
  • 1 tbsp. sesame seeds
  • 1 tbsp. light soy sauce
  • 1 1/2 tsp. dark-roasted sesame oil

Instructions

  • Step 1
    Heat the canola or corn oil in a large non-stick skillet over medium heat.
  • Step 2
    Add the zucchini, onion, and gingerroot. Stir-fry about five to eight minutes.
  • Step 3
    Sprinkle with sesame seeds, soy sauce, and sesame oil. Toss to blend.
