What you'll need
- 4 med tomatoes, diced (4 cups)
- 2 tsp. dried basil
- 2 tsp. chopped garlic
- 1/4 tsp. ground black pepper
- 1 tsp. salt (optional)
- 6 oz uncooked angel hair pasta
- 2 tbsp. grated Parmesan cheese (optional)
- Step 1
Mix the first five ingredients and let set a room temperature at least 1 hour.
- Step 2
Cook angel hair past according to package directions and drain.
- Step 3
Top pasta with tomato mixture. Serve immediately and top with Parmesan cheese (optional). (NOTE: One serving is a good source of fiber.)
