What you'll need
6 ozmarinated artichoke hearts
2 tbsp.lemon juice
1 tsp.finely chopped garlic
3 cupcooked rice, chilled
3 largetomatoes, seeded and diced
1 medred onion, diced
1 canwhole black olives, drained and quartered (5 3/4 ounces)
2 tbsp.chopped fresh parsley
2 tbsp.slivered almonds, if desired
Step 1 Drain artichokes, reserve marinade and slice in half. Combine lemon juice, garlic, reserved marinade and salt and pepper to taste. Gently combine dressing, rice, artichoke hearts and remaining ingredients and mix well to coat. Sprinkle almonds over all, if using.
