What you'll need

  • 12 med low calorie crepes
  • 1 cup creamed cottage cheese
  • 2 tbsp. granulated sugar replacement
  • 1 tsp. vanilla extract
  • 1/2 tsp. lemon peel (grated)
  • 2 tbsp. powdered sugar replacement


  • Step 1
    Reserve low calorie crepes. Combine cottage cheese, granulated sugar replacement, vanilla and lemon peel in mixing bowl. Whip with fork until thoroughly blended. Fill each low calorie crepe with heaping 1 tablespoon of cottage cheese filling, roll each one to form blintzes and place in shallow pan.
  • Step 2
    Bake blintzes at 350-degrees for 15 minutes, or until the blintzes are warm. Sift the powdered sugar replacement over the blintzes.
  • Step 3
    Microwave Directions: Microwave: Cook blintzes on medium for one minute. Sift the powdered sugar replacement over the blintzes.
