Using a combination of flours and sweeteners makes these little treats even richer.

What you'll need

  • 1 1/2 cup spelt flour
  • 1 cup oat flour
  • 3 tsp. aluminum-free baking powder
  • 2 tsp. cinnamon
  • 2 tsp. ground ginger
  • 1/2 cup nuts (optional)
  • 6 tbsp. coconut oil, warmed to a liquid consistency
  • 3 tbsp. milk substitute (rice, milk, soy milk, etc.)
  • 1 1/2 cup grated carrots
  • 1/4 cup raw honey (you may add 1 more tablespoon for a sweeter cookie)
  • 1/4 cup brown rice syrup (you may add 1 more tablespoon for a sweeter cookie)
  • 1 med organic egg
  • 1 dash of salt


  • Step 1
    Preheat oven to 350 degrees Fahrenheit. Mix together all dry ingredients, raisins, and nuts.
  • Step 2
    In a large bowl, mix all wet ingredients together, including carrots; gradually add the dry ingredients, making sure the raisins and carrots and brown rice syrup before adding them.
  • Step 3
    Drop with a spoon onto a greased baking sheet; bake for about 8 minutes.
  • Step 4
    SUBSTITUTIONS: You could add many different goodies to this recipe. How about some coconut, mixed nuts (except peanuts, seeds, or a small amount of cut fruit? if you want to use a different flour, you could substitute quino or amaranth flour in place of the spelt flour. Remember to add 1/8-1/4 cup of arrowroot powder or other binder.
