What you'll need
1 cupchopped romaine lettuce
1/4 cupchopped fresh basil
1/2 cupsliced cucumbers
1 medstar fruit (cut into 5 stars)
4 smallwalnut halves
1 tsp.olive oil (for dressing)
1 packet(s)sugar substitute (used Splenda in the analysis) (for dressing)
1 ozfresh orange juice (for dressing)
2 tsp.apple cider vinegar (for dressing)
Instructions
Step 1 Mix dressing ingredients together.
Step 2 Spray cut star fruit pieces lightly with canola or olive oil cooking spray. Broil until slightly brown. (NOTE: If you have a grill going at the same time you can grill the star fruit instead of broiling.
Step 3 In a salad bowl mix lettuce, basil, cucumbers, and walnuts. Top with broiled star fruit. Top with dressing. Eat immediately. YUM!! (NOTE: High source of vitamin A and vitamin C, good source of fiber.)
