What you'll need
1 medorganic egg, beaten
1/4 cuprice milk
1/2 cuporganic butter (1 stick), softened
1/2 cupcoconut oil, warmed to a liquid consistency
1/2 cuppure honey
1 tsp.vanilla extract
1 1/2 cupoat flour
1 tsp.baking soda
1 tsp.cinnamon
1 tsp.sea salt
3 cuprolled oats
1/2 cupwalnut pieces
1/4 cupsunflower seeds
1/2 cupminced, peeled apple
Instructions
Step 1 Preheat oven to 375 degrees Fahrenheit.
Step 2 Mix together wet ingredients, including softened butter, in a large bowl. In a separate, smaller bowl, mix together flour, baking soda, cinnamon, and sea salt. Slowly add dry ingredients to wet ingredients, stirring constantly, until you have a smooth batter. Add oats, nuts, seeds, and apple, stirring gently until mixture is uniform. Drop with a spoon onto a greased cookie sheet, and bake for 9-12 minutes.
Step 3 SUBSTITUTIONS: If you cannot tolerate any dairy, coconut oil can be used instead of butter with no change in flavor. Any nuts or seeds and many fruits can be used, so don't be afraid to experiment. Add grated zucchini to moisten and add flavor to these cookies.
