Orange juice concentrate and orange peel team up with dried cranberries to make these tasty, holiday worthy cookies. Optional walnuts lend a nice crunch.

What you'll need

  • 1/4 cup margarine
  • 1 med egg
  • 3 tbsp. frozen orange juice concentrate
  • 3/4 cup all-purpose flour, sifted
  • 1/4 cup rolled oats
  • 2 1/2 tsp. sugar or sweetener equal to
  • 1/4 tsp. baking soda
  • 1/8 tsp. cream of tartar
  • 1 dash salt
  • 1 tsp. orange peel
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts (optional)


  • Step 1
    Cream margarine in a medium bowl. Beat in egg and frozen orange juice concentrate. Combine flour, rolled oats, sweetener, baking soda, cream of tartar, salt and orange peeling a separate bowl. Add dry ingredients into the creamed mixture and mix well. Stir in dried cranberries and chopped walnuts. Drop by teaspoons onto a lightly sprayed non-stick cookie sheet.
  • Step 2
    Bake at 375-degrees for nine to ten minutes until bottoms are lightly browned. Cool on wire racks. (Recipe makes 24 cookies)
