Summary
Simple green beans never tasted so good. This dish offers a great way to get some green vegetables into your family members' diets.
What you'll need
2 tbsp.olive oil
1/2 tsp.black or yellow mustard seeds, available in the bulk herb section of most health-food stores
1/2 cube(s)of peeled ginger, sliced julienne thin
1/4 cupwater
1 lbgreen beans, washed and trimmed
1/2 tsp.ground cumin
1/4 tsp.tumeric
1 tsp.sea salt
2 tbsp.minced fresh cilantro
1 medlemon with juice squeezed out (keep the juice, throw away the lemon)
Instructions
Step 1 Saute mustard seeds and ginger in olive oil over moderate heat until mustard seeds begin to pop.
Step 2 Add the beans and stir-fry over medium heat for about 5 minutes. Add the water, cover tightly, and simmer for 5 minutes.
Step 3 Remove the lid when most of the water has evaporated. Add all remaining ingredients except lemon juice, and continue cooking until the beans are warm but still slightly crispy.
Step 4 Add the lemon juice just before serving. Serve warm.
