What you'll need
1 pkg.white Angel Food cake mix
1 tsp.cinnamon (for cake mix)
1 tsp.ground ginger
1/2 tsp.nutmeg
4 medred apples (e.g., Macintosh)
1/2 cuporange juice
2 tbsp.brown sugar
2 tsp.cornstarch
8 packet(s)sugar substitute
1 tsp.cinnamon (for Cran-Apple topping)
1/4 cupwater
1 cupcranberries
Instructions
Step 1 Add the cinnamon, ginger and nutmeg to the dry cake mix and then prepare and bake following the directions on the package. Let it cool in the pan, invert on a wire rack.
Step 2 For cran-apple topping:
Remove the cores and thinly slice the apples. Put them in a large skillet.
Step 3 In a small mixing bowl, stir together the orange juice, brown sugar and cornstarch until smooth. Add the sugar substitute, cinnamon and water.
Step 4 Pour orange juice mixture over the apples and cook over medium heat until the juice starts to bubble, stirring occasionally.
Step 5 Reduce the heat to simmer and add the cranberries; simmer 10-15 minutes more or until the berries pop.
Step 6 Serve the warm sauce over slices of the cake.
